How to Make Pizza Stuffed Zucchini

Making your own pizza stuffed zucchini is super simple (YAY for easy weeknight dinners). And it’s even easier than making a homemade pizza because you don’t have to make pizza dough!

To make pizza stuffed zucchini you’ll need:

  • Large zucchinis
  • Olive oil
  • Garlic powder and black pepper
  • Ground beef
  • Onion
  • Marinara sauce
  • Shredded mozzarella cheese
  • Pepperoni

The first step to making pizza stuffed zucchini is to prepare the zucchini.

While using smaller zucchini is often recommended for squash recipes, this time you should use the biggest zucchini you can find.

This will allow you to stuff lots of delicious pizza toppings inside each zucchini boat! (And you're going to want lots of toppings!)

Since you’ll be using large zucchini for this recipe, you’ll need to remove a lot of the center from the squash to make room for the pizza toppings.

Start by cutting each end off the zucchini, then cutting it in half and in half again lengthwise.

Then, grab a spoon and scoop out the center of each zucchini quarter and place it on a parchment paper lined baking sheet.

Brush each zucchini with olive oil and season with garlic powder and black pepper. Place the zucchini in the oven and bake them for 10 minutes to allow the zucchini flesh to soften a little bit before you add the toppings.

While the zucchini is cooking, take a few minutes to get your toppings ready.

Add the ground beef to a skillet and cook over medium heat until browned and crumbled. When the meat is beginning to brown, add in the chopped onion. When the zucchini is ready, remove it from the oven and add the meat and marinara mixture to the center of each zucchini. Top the marinara sauce with shredded cheese and add pepperoni to the top of the stuffed zucchini.

Ingredients

  • 4 Large Zucchini, cut into quarters
  • 2 Tablespoons Olive Oil
  • 1 Teaspoon Garlic Powder
  • ½ Teaspoon Plack Pepper
  • 1 Pound Lean Ground Beef
  • 1 Small Onion, Diced
  • 1 Jar Sugar Free Marinara/Pizza Sauce or 1 Recipe Sugar Free Pizza Sauce
  • 2 Cups Shredded Mozzarella Cheese
  • 32 Slices Pepperoni

Instructions

    1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper or foil.
    2. Use a spoon to scoop the center out of each zucchini quarter. Brush the zucchini with olive oil and season with a garlic powder and black pepper. Place the zucchini in the oven and cook for 10 minutes.
    3. While the zucchini is baking, brown the ground beef and onions. Combine the cooked ground beef and marinara sauce.
    4. Remove the zucchini from the oven and fill the center with ground beef and marinara sauce. Top with shredded cheese and pepperoni.
    5. Place the zucchini back in the oven and bake for 30 minutes, until the cheese is melted.
