FORGOTTEN COOKIES

Forgotten Cookies Ii Recipes with ingredients, nutritions, instructions and related recipes (3)

These meringues are crispy on the outside and marshmallow-y on the inside, with bits of chocolate throughout. The best part of this recipe is that you turn off the heat once the cookies go in the oven, so you can truly forget about them until the morning. A spring-loaded ice cream scoop makes fast work of forming the meringues and you can use any size you like.

Provided by Food Network Kitchen

Categories dessert

Time 4h15m

Yield 20 to 40 cookies, depending on size of scoop

Number Of Ingredients 6

  • Ingredients
3 large egg whites, at room temperature
Pinch of fine salt
3/4 teaspoon cream of tartar
1 cup superfine sugar
1 teaspoon pure vanilla extract
1 1/4 cups mini semisweet chocolate chips, plus more for garnish

Steps:

  • Position 2 oven racks in the center of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment.
  • Beat the egg whites and salt in a large bowl on medium speed until frothy. Add the cream of tartar and increase the speed to medium high. Beat in the sugar, 1 tablespoon at a time, then add the vanilla extract. Continue beating until the meringue is thick, glossy and holds stiff peaks, about 6 minutes. Gently fold in the chocolate chips with a rubber spatula.
  • Using a spring-loaded ice-cream scoop (or 2 spoons, using one to nudge the meringue off the other), scoop the meringue into mounds about 2 inches apart on the prepared baking sheets. Sprinkle each cookie with a few more chocolate chips.
  • Put the baking sheets in the oven, then immediately turn off the oven. Let the meringues stand in the oven until dry, at least 4 hours and up to overnight.

These cookies should never be forgotten.

Provided by Joy Howard

Time 8h20m

Yield 12 cookies

Number Of Ingredients 7

  • Ingredients
2 egg whites
¼ teaspoon cream of tartar
1 teaspoon vanilla extract
Pinch kosher salt
½ cup caster sugar
½ cup semisweet chocolate chips
½ cup toasted chopped pecans

Steps:

  • Heat the oven to 350° and line a baking sheet with parchment paper. In a stand mixer set at medium speed, whisk the eggs until frothy. Add the cream of tartar, vanilla, and salt and continue to whisk until soft peaks form. Add 1 tablespoon sugar and continue whisking until the sugar has dissolved. Continue adding the sugar, 2 tablespoons at a time, letting the sugar dissolve completely between each addition (you can check by rubbing a small bit of the meringue between your fingers to make sure it's not grainy). Continue whisking until stiff peaks form.
  • Use a spatula to fold in the chocolate chips and pecans. Use a large tablespoon to spoon heaping portions of the meringue on the baking sheet, spacing them 2 inches apart (you should have enough for 12 cookies). Place in the oven and bake 5 minutes, the turn off the heat. Let the cookies dry in the oven for 8 hours or preferably overnight.

FAQs

What are the 4 main ingredient in baking cookies? ›

While there may be countless variations, each cookie at the core has four ingredients – butter, sugar, flour & eggs. The proportions of ingredients and the methods of mixing are what define our cookies. Dough spreads – Inside the hot oven, the butter starts to melt and the dough gradually starts to spread out.

What ingredient makes a cookie rise? ›

Baking Powder. The type of leavening you use in your cookies doesn't just help them rise while baking, it affects their texture and structure too. Baking soda in cookies yields a denser cookie with craggy tops, while baking powder causes cookies to rise higher during baking for a cakier texture.

What ingredient holds cookies together? ›

Flour is the main ingredient that provides structure in a cookie – without it, there would be no cookie! The gluten in flour forms a web of sorts – the framework that catches the air bubbles/gasses given off during rising. This helps provide the structure.

Why do many chocolate chip cookie recipes contain baking soda and brown sugar? ›

Brown sugar is acidic, which means its best friend is alkaline baking soda; when combined, they activate, Wonder Twins–style, to produce carbon dioxide. Both sugars are hygroscopic, so they compete with flour to soak up moisture from the dough, but brown more so than white.

What makes cookies fluffy and not flat? ›

Room temperature butter is just the right consistency to incorporate air when it's creamed with sugar. These trapped air pockets result in risen, fluffy cookies. If the butter is any warmer, it won't incorporate enough air and your cookies will have less rise.

What makes cookies chewy and not hard? ›

If you enjoy your cookies soft and chewy, chances are likely the recipe contains a common ingredient that serves a very specific purpose. No, it's not granulated sugar, nor the butter. It's not the egg, all-purpose flour, or even the vanilla extract. The simple, yet oh-so-necessary component is cornstarch.

What makes a cookie chewy instead of crunchy? ›

The ingredients you use and how you shape your cookies both play an important role in whether your cookies turn out crispy or chewy. The type of flour and sugar you use, if your cookie dough contains eggs, and whether you use melted or softened butter all factor into the crispy-chewy equation, too.

What makes cookies soft vs crispy? ›

Butter contributes milk solids and water to a cookie, both of which soften it. Brown sugar contributes molasses – again, a softener. Using lower-moisture sugar (granulated) and fat (vegetable shortening), plus a longer, slower bake than normal, produces light, crunchy cookies.

What keeps cookies soft and chewy? ›

The bread/apple trick

Here's a baker's trick you'll find in our new Monster Cookies recipe: Adding a piece of fresh white bread to the storage container will keep cookies from becoming hard or stale.

What are the 7 basic ingredients in all cookies? ›

What are the 7 basic baking ingredients?
  • Flour.
  • Raising Agent.
  • Salt.
  • Fats & Dairy.
  • Add-Ins.
  • Water.

What makes cookies stay thick? ›

Use Bleached Flour (Instead of Unbleached)

Bleached flour absorbs more moisture than unbleached flour, making for THICK Cookies. If you struggle with your cookies spreading out more than you want, try using bleached flour.

What does baking soda do to gray hair? ›

Gray hair can be affected detrimentally when baking soda is added to it, as the natural oils will become stripped and cause breakage of dry hair due to excessive dryness and brittleness.

Does baking powder go bad? ›

Baking powder does have an expiration date, meaning it loses its leavening action over time.

What are the 4 major baked products? ›

Bread, cookie, muffin, and cake are the most common baked goods. The major components responsible for the texture, flavor, and visual appearance of most bakery items are flour, water, and leavening agents.
